Almond, cinnamon and banana porridge with a blueberry compote

Fall is upon us, and it’s a great time to cozy up with some warm comfort food. But why not make it delicious,Â healthy comfort food? It is possible, and Naturally Sassy, young dancer-nutritionist-chef Saskia Gregson-Williams, is here to help! Her flavourful Almond Cinnamon and Banana Porridge with Blueberry Compote is perfect any time of the day – morning, post-class or as a late night nutritious snack!
350ml (1Â½cups) almond milk
50g (Â½cup) (gluten-free)
Â¼teaspoon ground cinnamonÂ (optional)
1 tablespoon almond butter
60g (Â½cup) blueberries
1 tablespoon water
1 teaspoon fresh lemon juice
This porridge combines some classic flavours: theÂ gentle spiciness of the cinnamon; the nuttiness ofÂ the almond milk; and the intense burst of sweetnessÂ from the banana and blueberries. Wonderfully richÂ and completely moreish, this is an everyday stapleÂ in my household!
Pour the almond milk into a pan set over a medium highÂ heat. When it starts to bubble, add the oats andÂ lower the heat to a simmer.Â Peel and mash the banana and add to the pan if youÂ want it to melt into the porridge; if not, stir it into theÂ porridge when itâ€™s cooked. Add the cinnamon, if using,Â and simmer for 5â€“10 minutes, stirring frequently.
Just before the porridge is ready, make the compote.Â Pop the blueberries, water and lemon juice into a smallÂ pan set over a high heat. Get the blueberries bubblingÂ away before gently pushing them down and burstingÂ them with your wooden spoon.When it becomes aÂ smooth compote with a few whole plump blueberriesÂ remaining, remove from the heat.
Once the porridge is cooked through, stir in theÂ almond butter and pour into your bowl, spoon overÂ the compote and enjoy!
SWITCH IT UP
Blueberries make a delicious compote and go so wellÂ with the banana and cinnamon, but you can also useÂ raspberries, strawberries or blackberries instead.
You can make the blueberryÂ compote just after youâ€™veÂ poured out the porridge,Â using the same pan to saveÂ on washing-up.
